Ingredients

- 3 dried squids (medium size)
- 1 garlic (medium size, smashed)
- 10g butter
- 1,5 tablespoons fish sauce
- 1,5 tablespoons sugar
- 1 tablespoon chili powder
- 1 tablespoon chili sauce.

Process

Fried Squid with Butter and Garlic

- Soak dried squids in warm water in 1 – 2 hours

- Absorb all water, wait to get dry

- Grill on cob until it is fragrant (do not need to grill until cooked). Smashed gently and tear small.

Ingredients


- 1kg sea crabs
- 1 bunch of dried anchovy fishes
- 1 teaspoon miso soup
- 1 tablespoon chili sauce
- 1 tablespoon chili powder
- 3 tablespoons black soy sauce
- 1 tablespoon rice wine
- 1 garlic, 1 brand of ginger, pepper.

Process

- Clean well sea crabs, use brush to wash carefully their bodies and legs.

- Seperate shells and bodies of crabs. Pull out the striangle shapes on their bellies, store the eggs into clean bowl.

- 300g beef meat
- 2 oranges
- 1 tablespoon orange juice

- 2 tablespoons corn starch, 2 teaspoons tapioca starch
- 3 cloves of garlic

- Clean orange, peel and get orange skin (do not peel to the white skin inside).

- 3 Indian mackerel fishes
- 400g baby bamboo shoots
- 1 bunch of spring onion (use ONLY white parts)
- Fish sauce, chili, pepper, sugar, salt.

Process

- Clean fishes with salt and wash again with water. Slice some lines on their bodies, apply a little salt on their bodies and wait in 15 minutes. Peel off the harsh part of bamboo shoots. Boil in hot water to reduce all poition from it. Wash many times with water and wait to get dry.

- Fry quickly in 5 – 7 minutes fish (both sides). Put on plate added paper napkin to absorb oil. Use that pan again, fry purple onion until it is fragrant. Continue add bamboo shoots and fry gently.
